Servings: 2

Ingredients:

2  – 1 lb to 1.5 lb Florida lobster tails

1/3 cup extra virgin olive oil

1 teaspoon salt

1 teaspoon pepper

1/2 clove of fresh garlic

1 Tablespoon finely chopped parsley

1 bunch medium sized asparagus

Directions:

Half both lobster shells down the middle. Brush the meat with the extra virgin olive oil. Then, sauté smashed garlic in remaining extra virgin olive oil for 2 minutes.

Transfer garlic to a small bowl and add salt, pepper and parsley. Use the mixture to season the lobster meat, and then broil at 500 degrees for approximately 15 to 20 minutes.

When the lobster is a few minutes from being done, prepare asparagus by rinsing thoroughly and breaking off any tough white bottoms. Cut the asparagus into 2 inch sections, and then slice at a slight diagonal. Blanch in boiling water for 2 minutes.

Serve lobster with asparagus on the side.
