Pepper Encrusted Ahi Tuna Appetizer

Yellowfin tuna are a blast to catch since they are known for their speed and strength when being fought on rod and reel. They also happen to be a favorite of most seafood connoisseurs. So reel in or purchase some sashimi grade yellowfin (otherwise known as ahi), then try this easy appetizer!

Ingredients:

1 inch center-cut fresh ahi tuna (approximately 4 oz.)

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

2 teaspoons crushed black peppercorn

1 teaspoon kosher salt

1 teaspoon brown sugar

Parsley

Purchase or catch fresh ahi tuna. Freeze it solid overnight. Remove from freezer and run under cool tap water for approximately 2.5 to 4 minutes until the outside begins to thaw.

Mix garlic powder, crushed peppercorn, salt and brown sugar in small bowl. Roll tuna in the seasoning mixture.

Heat olive oil in a medium pan and sauté each side of tuna for about 10 seconds (just enough to sear the outside).

Place in refrigerator. Once the interior is fully thawed, slice, garnish with parsley and serve!
